Obtained exclusively from selected and traced pigs. Worked on the Dauni Mountains of Puglia with seasoning in the mountains, among woods at 1,000 meters with integrated natural ventilation.

Average ripening: 3 months.

Worked according to special family recipes with hand binding.


DESCRIPTION

CAPOCOLLO TRADITIONAL SEASONED

Fruit of the pure tradition. Starting from the selection of the best pork cups, it provides for the salting by hand and the addition of light aromas.

It is stuffed by hand in natural casing, processed and tied by hand, tanned with spices and marinated according to the exclusive family recipe. The filling is followed by the seasoning period in the classic net in which the capocollo is left hanging for about 80 days.

Ruby red colour, with pinkish-white streaks and sweet and delicate taste.

CAPOCOLLO PUGLIESE

Capocollo Pugliese is tied by hand from the head and is tanned with different aromatic spices.
