Made exclusively from pigs born, raised, and slaughtered in Italy (100% Italy). Processed in the Dauni Mountains of Puglia with mountain seasoning, among woods at 1,000 meters with integrated natural ventilation.

DESCRIPTION
The epitome of pure tradition. Starting from the selection of the best pork neck cuts, it involves hand salting and the addition of light aromas.
Hand-stuffed into natural casing, worked and tied by hand, seasoned with spices and marinated according to the exclusive family recipe. After stuffing, it undergoes a seasoning period in the classic net, where the capocollo is hung for about 80 days.
Ruby red in color, with white-pinkish streaks and a sweet and delicate taste.
