Mommy told me that Lu Prupate was getting ready to celebrate the wedding. She prepared it mostly at night and together with her companions they accompanied the work by singing love songs. For this reason I too work the dough in the middle of the night whistling melodies and thinking about my beloved.
Lu Prupate comes from a naturally leavened dough with sourdough, thanks to Apulian flours with wheat germ, free-range eggs, pure honey, cinnamon and cloves. It is precisely the spices and perfumes that permeate my oven every time I prepare my prupati, which remind me of the auspicious and propitiatory meaning that this sweet has.
