CHARACTERISTICS
Made exclusively from selected and traceable pigs. Processed in the Dauni Mountains of Puglia with mountain aging, among woods at 1,000 meters with integrated natural ventilation.
Short aging: 1 month.
Made according to ancient local traditions with hand-tying.
DESCRIPTION
Made from the belly parts of pigs.
Once squared and trimmed, it is salted, flavored, and spiced. This is followed by a period in which the pancetta is left to rest for several days. The subsequent process varies depending on the desired product: sprinkled with salt or even with herbs and spices.
The final external appearance at the cut shows a layer of white fat with pink threads (more or less dark) of lean meat. In the smoked pancetta, the fat appears darker, tending to ivory yellow, while in the one flavored with chili pepper, it will have reddish reflections.
It is produced both sweet and spicy, smoked, flattened, and coppata. Stored in practical vacuum-packed packages, it retains freshness, flavor, taste, and genuinity.
