Obtained exclusively from pigs born, raised and slaughtered in Italy (100% Italy). Worked on the Dauni Mountains of Puglia with seasoning in the mountains, among woods at 1,000 meters with integrated natural ventilation.
Long maturation: 16 months.
Worked according to ancient local traditions with sauce, binding, puncture and hand marking
DESCRIPTION
The Faeto ham (presutt' de Fait' in Faetano dialect) is a typical traditional salami produced in the Faeto area and is made from the legs of pigs born, raised and slaughtered in Italy. The hams are of medium/large size: the bone thighs reach weights of not less than 9 kg, while the boned thighs weigh not less than 7.5 kg.
The meat is salted with salt from the salt pans of Margherita di Savoia, and no other preservatives are used. After a first phase of maturation (lasting about 4 months) the ham is "sugnato", that is stuffed with lard, rice flour and pepper. This is followed by the second stage of maturing which lasts for at least one year. The minimum production is 14 months, but it can last up to 18 months.
The final product, thanks to the cool and ventilated climatic conditions of the Alta Valle del Celone, has a high trimming and a particular flavor.
