Obtained exclusively from pigs born, raised, and slaughtered in Italy (100% Italy). Processed in the Dauni Mountains of Puglia with mountain aging, among woods at 1,000 meters with integrated natural ventilation.
Short aging: 16 months.
Made according to ancient local traditions with greasing, tying, pricking, and hand branding.
DESCRIPTION
Faeto ham (presutt' de Fait' in Faeto dialect) is a traditional typical salami produced in the territory of Faeto and is obtained from the thighs of pigs born, raised, and slaughtered in Italy. The hams are of medium/large size: the bone-in thighs weigh not less than 9 kg, while the boneless thighs weigh not less than 7.5 kg.
The meats are salted with salt from the Margherita di Savoia salt pans, and no other preservatives are used. After an initial aging phase (lasting about 4 months), the ham is "greased," i.e., stuffed with lard, rice flour, and pepper. The second phase of aging then continues for at least one year. The minimum production aging is therefore 14 months but can extend up to 18 months.
The final product, thanks to the cool and ventilated climatic conditions of the Upper Celone Valley, has a high trim and a particular savoriness.
