Round like a crouched sleeping fox, tarallini have always reminded me of Renard, the fox from The Little Prince. I've always imagined Renard crouched in my laboratory dreaming with her of all the planets to explore.
Renardini are born from a simple dough, thanks to Apulian flour with wheat germ, Bombino wine, one of the oldest and most widespread white grapes of the South, and pure Peranzana extra virgin olive oil. I decided to embellish the dough with Gargano wild fennel seed, potatoes and rosemary, tomato and oregano, onion and chilli pepper, cereal seeds and toasted durum wheat flour. Each flavor contains the warmth of this land and the aromas of simple and genuine ingredients grown in the sun.
