CHARACTERISTICS

Obtained exclusively from selected and traced pigs. Worked on the Dauni Mountains of Puglia with seasoning in the mountains, among woods at 1,000 meters with integrated natural ventilation.

Short maturation: 20 days.

Worked according to ancient local traditions with hand binding.

DESCRIPTION

Made following the ancient and traditional family recipe, it is obtained from the best cuts of lean meats, such as shoulder, bacon, thigh and lard.

It is characterized by the "knife tip" cut, that is cubes, of the pork meat that determines a coarse-grained dough and an optimal flavor of the sausage. This prevents the heat released by the meat grinder from ruining the product.

The sausage is then stuffed into completely natural casings with the addition of wild fennel seed. The particular quality of the casing gives important sensory properties to the sausage, allowing a correct maturation of the product and the acquisition of all its peculiar organoleptic characteristics.

Dark red in color, it is produced both sweet and spicy. Kept in practical vacuum packaging, it maintains freshness, flavor, taste and authenticity.
