CHARACTERISTICS
Made exclusively from selected and traceable pigs. Processed in the Dauni Mountains of Puglia with mountain seasoning, among forests at 1,000 meters with integrated natural ventilation.
Short seasoning: 20 days.
Made according to ancient local traditions with hand-tying.
Crafted following the ancient and traditional family recipe, it is made from the best cuts of selected lean meats, such as shoulder, pancetta, thigh, and lard.
Characterized by the “knife-point” cutting, or cubing, of the pork which results in a coarse-grained mixture and an optimal flavor of the sausage. This method avoids the heat generated by the meat grinder from damaging the product.
The sausage is then stuffed into a completely natural casing with the addition of wild fennel seed. The particular quality of the casing gives important sensory properties to the sausage, allowing for correct maturation of the product and the acquisition of all its unique organoleptic characteristics.
Dark red in color, it is produced both sweet and spicy. Stored in practical vacuum-packed packages, it retains freshness, flavor, taste, and genuineness.
