CHARACTERISTICS

Typical De Luca product from traditional recipe typical of Faeto.Obtained exclusively from selected pigs and tracks. Worked on the Dauni Mountains of Puglia with seasoning in the mountains, among woods at 1,000 meters with integrated natural ventilation.

Short maturation: 40 days.

Worked according to ancient local traditions with hand binding.


DESCRIPTION

Obtained from lean meats chosen with "knife-tip" cut. This coarse grain cut allows the meat to remain very compact and thus keep intact all its peculiar organoleptic characteristics.

During processing is added Lardello, salt and whole grain pepper, to give the soppressata its unique and unmistakable flavor. It is then stuffed by hand in natural casing, according to the traditional method, to begin the maturing.

Kept in practical vacuum packaging, it maintains freshness, flavor, taste and authenticity.
