CHARACTERISTICS
Obtained exclusively from selected and traced pigs. Worked on the Dauni Mountains of Puglia with seasoning in the mountains, among woods at 1,000 meters with integrated natural ventilation.
Average ripening: 2 months.
Worked according to classic recipes of the taste with hand binding.
DESCRIPTION
Obtained from selected and finely ground pork, it is combined with the lard cut into cubes, more or less large, with the addition of salt, aromas and spices and in some specialties with fennel seeds.
The preparation is then stuffed into a natural casing and pressed, precisely crushed, hence the name flattened or crushed. A period of drying and seasoning follows.
