The continuous pursuit of quality leads us to control the entire supply chain and ensure a strictly artisanal production process. The wheat, 100% sourced from Puglia, is milled in Altamura (BA) at a historic artisanal mill and processed into pasta in Gravina di Puglia (BA), creating a unique product.
Our "double grain" semolina:
Thanks to Molino De Vita, we obtain a semolina as it was made in the past. With state-of-the-art machinery that guarantees consistent and excellent quality. In particular, the grinding cylinders, operating at a low speed, enable a slow processing that preserves the integrity of the organoleptic characteristics of the product, as well as its natural fragrance and aromas. This is how the true "double grain" semolina is born, used to make our pasta, which is produced through whole grain milling, with low refining and high technological value. The product also retains a high fiber content, a high level of vitamins, minerals, antioxidant compounds, and proteins of high biological value.
Our dry pasta:
Bronze extrusion allows the product's surface to be porous, rough, matte, and textured, with a surface covered in starch dust, resulting in a greater ability to retain various types of condiments. The slow drying process, lasting over 24 hours, at very low temperatures, also means a greater retention of nutrients in the pasta and the organoleptic qualities of the raw material.
