The Company

History and Values:

Pasticceria Casoli was born in Troia (FG), Puglia, in the Dauni Mountains, in a charming medieval village, 16 years ago. It was born out of Lucia's passion for good food, especially sweets. The very positive feedback from the public then involved Nicola, her spouse, in management and marketing, which required a broader organization and production to meet the demands of all customers.

Our mission is to surprise customers with products and services, innovating traditions, experimenting with flavors and combinations, with the commitment to excel in engaging all senses, interpreting the territory with natural products.

Behind the quality of our products lies the care and attention to respecting the standard of excellence of the raw materials. Our production specializes in sweet products made from local ricotta, selected flours, and unique Pugliese almonds (Filippo Cea) known for their organoleptic composition.

Our flagship products are PASSIONATA® and PAN DI PUGLIA®, sweets created by us, regularly registered in name and recipe. For us, quality is not only a fundamental principle but also a responsibility because we are aware of working in a delicate sector where it is our duty to ensure the protection of our customers' health. That is why the controls on our products are very strict and comply with national and European regulations.

The passion for one's work, the territory, good things done well, and last but not least, the passion of the couple who turned their passion into a job, give the name to this exclusive dessert (Passio-nata, Born from Passion). The idea was to create a product whose beauty and goodness expressed the aromas, colors, and flavors of our territory. To surprise customers with a taste that is not overly sweet but has a well-defined and delicate character. To offer moments of complete abandonment to pleasure and taste.

PASSIONATA® is produced in 11 different flavors, just like the rays of the rose window of the magnificent cathedral of Troia, and each flavor is represented by a color. In particular, the Classic, with its delicate pink color, won the prize for the best dessert in Puglia for two years in Trani (Bat). It has the flavor of "Blooming Almond" and is made with 3 types of ricotta: Cow, sheep, and buffalo, blended with a secret, innovative, and exclusive process.

The variations include Gargano Orange, Amaretto (bitter Pugliese almond), Moscato di Trani, Nero di Troia Wine, Elderflower, Pomegranate. To meet the demands of our customers, we have also added Hazelnut, Pistachio, Strega, and Lattedoro (Turmeric and Black Pepper). The flower resting on the almond dome symbolizes the magnificent Rose Window of the Cathedral of Troia.

PAN DI PUGLIA®:

PAN DI PUGLIA® is produced in various sizes: 100 grams, 450 grams, and 1000 grams. As an ambassador of Puglia, it immediately captures attention due to the composition of its ingredients.

The name already says a lot about itself. It tells the scents of its land, traditions, and fruits that are among the best in the world, such as wine, olive oil, wheat, figs, and the famous Pugliese almonds.

A new taste with ancient ingredients, a unique and exclusive combination. Sweet, fluffy, light, dark, delicate, crispy, elegant, refined.

Ingredients:

Made with selected raw materials exclusively from Puglia: Refined almonds, Semolina flour from durum wheat, Extra virgin olive oil, dried figs, toasted and caramelized almonds, cooked must from Nero di Troia wine, and dark chocolate.

Inside the elegant gift package, there is a 100ml bottle of cooked must to pour over the freshly cut slice.
